c low-fat Milk  
tb Melted acceptable spread of choice  
Eggs  
Beat egg yolks well add milk and melted  
spread. Combine salt, sugar, and flour. Add  
to first mixture. Beat until smooth. Fold  
in stiffly beaten egg whites. Sift baking  
powder lightly over the mixture and fold in  
quickly. Bake in hot waffle iron. 6  
servings.  
SWEET COTTAGE CHEESE PANCAKES -  
Makes 3 servings

cup low-fat cottage cheese  
whole egg  
egg whites  
Tbl apple juice concentrate  
/4 skim milk  
Tbl oil  
/4 cup whole wheat flour  
/4 cup wheat germ  
Place all ingredients in a blender or food  
processor and blend throughly. Let the batter  
stand 5 minutes. Heat a non-stick skillet or  
griddle coated with cooking spray over medium  
to high heat. Drop large spoonfuls of the  
batter on the hot surface and cook until the  
bottom side is brown; then flip over. Serve  
with fresh strawberries or applesauce  
Oatmeal Waffles/Pancakes  
Yield: 8 waffles / 16 pancakes

Tbsp canola oil  
c whole wheat flour  
/2 tsp salt
