cm piece of fresh ginger don't use powder
can Chinese straw mushrooms
sprig fresh coriander leaves
roma tomato chopped
cloves garlic chopped
/2 onion sliced
5 fresh red chillies
tbsp Vietnamese or Thai fish sauce
Directions
Shell and devein prawns. In a big pot of water boil up the prawn heads with
lemongrass, galangal,
tomato, garlic, onion and chillies for one hour.
Just before serving, add straw mushrooms, prawns, lemon juice and fish sauce.
Garnish with
coriander leaves, serve immediately.
Beef Kushisashi

/2 cup soy sauce
/4 cup chopped green onions and tops
tablespoons sugar substitute
tablespoon canola oil
-1/2 teaspoons cornstarch
clove garlic, pressed
teaspoon grated fresh ginger root
-1/2 pounds boneless beef sirloin steak
Blend soy sauce, green onions, sugar, oil,
cornstarch, garlic, and ginger in small
saucepan. Simmer, stirring constantly, until
thickened, about 1 minute; cool. Cover and set
aside. Slice beef into 1/8-inch-thick strips
about 4 inches long and 1-inch wide. Thread
onto bamboo or metal skewers keeping meat as
flat as possible; brush both sides of beef with
sauce. Place skewers on rack of broiler pan;
broil to desired degree of doneness.
Serves 10-12 for appetizers
