Cannellini Bean Salad  
Dressing:

cup olive oil  
1/3 cup red wine vinegar  
Salt & pepper to taste  
Pinch of oregano  
1
clove garlic, slightly broken  
Salad:

cans cannellini beans  
red onions, chopped  
bell pepper  
Minced parsley  
Dressing: Mix all ingredients together and let set at room temperature to  
blend flavors.  
Salad: Drain 2 cans of cannellini beans and rinse under cold water. Place  
in bowl and add 2 red onion chopped, 1 bell pepper cut in small pieces and  
some minced parsley. Add the dressing and adjust the salt and pepper. Add  
a little more oregano, if desired.

Lobster Salad in Endive Guacamole Dip or Salad Dressing

ripe avocados  
Tbsp. lemon juice  
small onion very fine chopped  
tsp. garlic powder  
Tbsp. mayonnaise  
Salt and pepper to taste  
Dash of Tabasco sauce  
Dash of Worcestershire sauce  
Very finely chopped jalapenos peppers to taste

chopped ripe tomato  
Placed peeled and cut avocados in a medium bowl and on low speed blend with  
mixer. Add remaining ingredients, adding jalapenos to suit your taste and blend  
until mixture is thoroughly blended together but not soupy. Chill and serve on  
lettuce as salad or with chips as dip. Place avocado pits in mixture while being  
stored in refrigerator to keep mixture  
Lentil Soup

stalks celery, diced  
1/2 cups crushed tomatoes  
?1/2 cups lentils ? soaked, rinsed and drained  
/2 teaspoon salt  
/2 teaspoon ground black pepper
