Tangy Red Bulgar

tablespoon olive oil, or vegetable oil  
cup red and green bell peppers, chopped  
cup zucchini or yellow squash, chopped  
1/4 cups Bloody Mary mix, or vegetable juice  
cup bulgur wheat  
tablespoon lemon juice  
teaspoon basil, or 1 tbl fresh  
/3 cup green onions, chopped  
Toss all ingredients except the basil and green onions in crockpot  
and cook on low for 8 hours, adding the basil after 7.5 hours, and  
garnishing with green onions just before serving.
