Citrus Chicken Salad

medium−size head Boston Lettuce  
can (11 oz.) mandarin oranges, undrained  
/4 cup sour cream  
tablespoons mayonaise  
/4 teaspoon salt  
/8 teaspoon black pepper  
/8 teaspoon chili powder  
tablespoon fresh lime juice  
oz. Cheddar cheese, cut in small cubes  
/3 cup crumbled cooked bacon  
/3 cup diced red onion  
/2 pound cooked chicken, cut in strips  
Rinse lettuce leaves and pat dry with paper towling. Tear into  
large salad bowl. Drain oranges through sieve over a bowl: reserve  
2
tablespoons liquid. Whisk together sour cream, mayonaise, salt,  
black pepper, chili powder, lime juice, and reserved orange juice  
in a small bowl.  
Add mandarin oranges, cheese, bacon, and onion to salad bowl.  
Add sour cream mixture; toss to coat. Top with chicken and  
serve immediately.
