Fried Sweet Plantains

Ripe plantains  
Vegetable oil; for frying  
Salt; to taste  
Preheat the fryer. Using a sharp knife, slice the plantains, diagonally,  
about 3/4−inch thick. Fry the plantains in batches until golden−brown, about  
3
to 4 minutes. Remove the plantains from the oil and drain on a paper−line  
plate. Season with salt and serve as a garnish or accompaniment with roast  
pork. This recipe yields 8 servings.
