Cassava - Pineapple Savoury

cup grated coconut
cups crushed pineapple

cup chopped onion or spring onion

Mix grated cassava with grated coconut and press thinly into a greased
flat baking dish or tray. Spread crushed pineapple, Chopped onion and
grated cheese on top of the cassava mixture. Bake in a moderate oven for 20
minutes until cooked and the topping is brown.
Put all the ingredients in a pot and bring to the boil. Cover the pot and
cook the mixture slowly until the meat is tender (about one hour). Add salt
and pepper to taste, then serve.
Note: High in fat and saturated fat. To reduce, use less coconut
Variation: Can substitute beef, pork or fish for chicken
and cheese.
