Large Fryer chicken − (abt 3 lbs); rinsed, and
Innards removed

Piece Fresh ginger −; (abt 1" long)
Cup Chopped green onions
Teaspoon Szechwan brown peppercorns
/2 pounds chicken meat.
Season the chicken with salt and pepper. Place the chicken in a pot and
cover with water. Add the remaining ingredients. Bring the liquid to a boil
and cover. Turn off the heat and cook for 2 hours. Strain and remove the
meat, discard the bones.
