Fill the pockets to their depths with the vegetable mixture, reserving about

tablespoon of the vegetables to rub over the top of the roast. Bake  
uncovered at 300F until a meat thermometer reads about 160F for medium  
doneness, about 3 hours. For rarer roast, cook until thermometer reads 140F.  
Serve immediately topped with some of the pan drippings if you like.

Cup Chablis wine  
Cup Green creme de menthe  
Tablespoon Onion powder  
Teaspoon Dried mint [crushed]  
Tablespoon Louisiana hot sauce  
Cup Soy sauce  
Cup Water  
Tablespoon Olive oil  
Mix all ingredients. Marinade lamb or goat 6 to 12 hours, then use the  
marinade as a basting sauce as it cooks.

Large Eggs  
Tablespoon Seeded and minced Jalapeno peppers  
Cup Corn kernels [at room temp]  
Cup All purpose flour  
Cup Yellow cornmeal  
Tablespoon Baking powder  
Teaspoon Salt

/4 Cup Milk  
Tablespoon Veg oil  
Preheat oven to 375. Grease a 12 muffin tin with the softened butter.  
In large bowl, whisk the eggs - add the jalapenos and corn. Stir in the  
flour, cornmeal, baking powder and the salt. Add the milk and oil. Stir just  
enough to mix well.  
Evenly divide mixture into 12 muffin cups.  
Bake until gold about 25 mins. Cool slightly before serving.
