Kolokythia Krokettes (Zucchini Pancakes)

cups grated zucchini
teaspoon salt
eggs
cup grated feta cheese
1/2 teaspoons minced fresh mint leaves
tablespoons flour
Pepper
Butter
Mix zucchini with salt and let stand 1 hour. Squeeze out moisture. Beat eggs. Add zucchini, cheese,
mint, flour and pepper to taste. Fry 1 tablespoon at a time in butter over medium heat. Brown on both
sides.
Makes 18 pancakes or 6 servings.
